Pedro's Energy Bars
No sugar added!
6 banana
2 tsp vanilla
2 tsp cinnamon
1/2 tsp salt
4 cups oat flour
1 cup cranberries
1/2 cup dates
1 cup walnuts
1 cup pumpkin seeds
1 cup sliced almonds
1.5 cup hemp seeds (shelled)
(add) 2 scoops of garden of life vegan protein (adds 44g extra protein)
Mash bananas, add vanilla, cinnamon, and salt, mix well.
Add in the oats and blend well then add everything else.
Spread across a parchment paper lined large 11x17" pan
bake at 350 for 25 minutes
whole thing has about 227.43g protein (183.43 w/o the supplement), divide that into 24 bars and you have about 9.5 grams of protein per bar and lots of good fats. I freeze these and take them out as needed.
