mushroom and Black Bean Burgers VEGAN

Ingredients

  • 3.5 cups Portobella mushrooms, baby bellas can be cut into 1/4ths
  • 2 cups cooked black beans, rinsed and divided
  • 1 cup broccoli (or veggies like carrot, pepper)
  • 1/2 cup red onion
  • 3 tablespoons flax meal and 9 tablespoons of water mixed up. 
  • 1/2-1 cup of panko bread crumbs
  • 1 Tbl steak seasoning (i used mrs Dash)
  • 1 Tbl Worcestershire
  • 2 Tbl minced garlic
  • 2 Tbl Siracha or similar 
  • 1/4 cup nutritional yeast
  • 1/2 cup vegan cheese (i use sticks or slices chopped in the food processor)
  • Olive oil for pan cooking 

Instructions

  1. Combine flax and water in a bowl, set aside.  
  2. Cook mushrooms in a little olive oil in a pan until they release their moisture and it evaporates.  Set aside.  
  3. Blend one cup of black beans in the food processor and add the other ingredients except the mushrooms, black beans, flax, and breadcrumbs.  Take this paste and add to a mixing bowl.
  4. Next, add in the mushrooms, beans, and flax mix, fold in.  Add bread crumbs last and add until the mixture sticks together well enough to make patties.  
  5. Cook on oiled pan over medium heat until browned and crusty on each side.
