Gluten Free Oatmeal Cookies

Recipe from Lisa Chicoyne

1/4 cup coconut oil
3/4 cup raw turbinado sugar (or brown)
1 cup creamy peanut butter
2 eggs
1 tsp vanilla
1 1/4 tsp baking soda
3 cups rolled oats
3-6 oz chocolate pieces (chips or cut up bar)
1/2 cup chopped walnuts

Beat coconut oil and sugar until creamy.  Add eggs, vanilla, baking soda.  Mix well.  Add pb and mix.  Stir in oats, chocolate and walnuts.  Form cookies with a teaspoon (or your choice of size).  Press firmly to form.  Bake on a lightly greased cookie sheet or parchment paper.

Bake in oven 350 10-12 minutes  (more time if making larger cookies)
