Date Based Bar Superfood Snacks
I was inspired to make these after eating one for around $8-$9 at a fancy place in lower manhattan.
All three recipes below are variations of the same basic 3-date recipe.
Superfood Chocolate Matcha Hemp Seed Snack
3 soft Medjool dates
1/2 cup almonds
1/2 cup nuts (I used Whole Foods unsalted deluxe mixed nuts)
1 tablespoon Matcha
1 teaspoon sprulina
1 teaspoon moringa leaf powder
1/2 teaspoon Vanilla extract
1/4 chocolate chips (can use nibs or any, I used no sugar added chocolate)
Hemp kernels (for rolling them in)
Soak the dates if they are not extremely moist in warm water for a few minutes. Add the nuts to a food processor and process until they are chopped up but not a paste yet. Add all the other dry ingredients and mix, then add the dates and vanilla extract. After the mixture is a loose conglomeration of chopped bits, take it out to press down on a plate or on parchment paper. After forming into balls or cutting into bars, press them into a pile of hemp seeds. Refrigerate to stiffen a bit or eat right away!
Blueberry
3 soft Medjool dates
1cup dried blueberries (no sugar added)
1 cup nuts
1/4 teaspoon cinnamon
1/2 teaspoon lemon zest
Coconut Kitchen Sink
3 soft dates
1 cup nuts/seeds (I used about 1/3 sunflower seeds, hemp, and mixed nuts)
1/2 cup coconut (unsweetened shredded)
Make these as the original, the coconut ones, I pressed into whole raw sunflower seeds to make them look more interesting.
