Soak a pound of black beans for 24 hours, making sure to change the water at least once during this period. Rinse throughly. To dry them out a bit, bake for 20-30 minutes at 300F stirring them to ensure even drying.
In a food processor, grind the beans up.
Transfer the mixture to a mixing bowl and add citric acid, chia seeds, cumin powder, and garlic powder, blend, then pour in the oil and water.
Leave the dough to set for 10 minutes and then roll out the bean batter in between two sheets of baking paper. The thinner the dough, the crunchier the chips will be.
Next, remove the top baking paper and sprinkle the mixture with sesame seeds, flax seeds, and pumpkin seeds if using them. Press them down by gently patting with the rolling pin or the back of a spoon.
Cut the dough to form chip shapes or cut with cookie cutter of glass to make rounds.
Bake for 20 minutes at 300°F, then, flip them and toast them for another ten.
