Preheat the oven to 350 degrees F and line a 7 x 11 pan with parchment paper.
Melt the vegan butter (earth balance brand preferred), and measure 1/2 cup. I do this by microwaving the vegan butter for a short while (10 seconds).
In a large bowl, whisk the melted vegan butter and sugars together then add the remaining ingredients, I add the cocoa and "flour" last.
Fold in half of the chocolate chips. Press the batter into the prepared pan. Sprinkle the rest of the chocolate chips on top of the batter, no need to press in.
Bake for 35-40 minutes. The brownies will cool to be quite crispy since there is no wheat, they make great cookie crumbles. There is 63g of protein per batch of brownies if using manna.
